Salmon with Mango Sauce
Makes 2 servings
Fiber content: 0g
2- 6 oz Salmon fillets
1 cup Mango juice
Scallions for garnish
Olive oil
Pour and heat enough olive oil to cover bottom of sauté pan to medium heat. Add salmon fillets. Pour half cup of mango juice over fillets. Let it cook for 5 minutes. Flip fillets and add the rest of the mango juice. Let it cook for an additional 5 minutes. Serve and garnish with scallions.
HIGH FIBER BAKED RECIPE
Flourless Chocolate Cake
Makes 8 servings
Fiber content: 12.6g
8 tbsp Unsalted butter
8 oz Semisweet chocolate
5 large Eggs, room temperature, separated
3/4 cup Sugar
2 tsp Vanilla
1/2 tsp Salt
Rice flour, for dusting
8 oz Semisweet chocolate
1/2 cup Cream
Whipped cream
Preheat oven to 350 degrees F. Butter 9 inch spring form pan, dust with rice flour. In metal bowl over double boiler, melt butter and chocolate. Set aside. With mixer beat yolks with sugar and vanilla. Set aside. Beat whites and salt together until stiff. Fold chocolate mixture into yolk mixture a little at a time. Fold in egg whites. Pour into spring form pan. Bake for 40 minutes until spongy. Remove from oven. Remove spring form. Let it cool completely. Once cooled prepare icing. Mix chocolate and cream over double boiler until smooth. Spread over cake. Top with raspberries and whipped cream.
